Freeze dried foods maintain 97% of their nutritional value, compared to 60% for dehydrating and 40% for canning. They maintain bioflavanoid, terpene, and vitamin integrity; do not oxidize; and prohibit mold spore colonization. When reconstituted with water, they have nearly the same color, shape, size, taste, and texture as they did before drying.

Shelf Life
Since freeze dried foods have little to no water content, they are shelf-stable at room temperature for up to 25 years without microbiological concerns.

Freeze dried foods weigh 70 to 90 percent less than they did before freezing, making them light weight for travel, backpacking, storage, and shipping.
