A Healthy, Corn-Free Alternative To Conventional Nachos

butternut-nachos-finalWe’ve been corn-free for several years after watching a documentary called King Corn.  If you’ve seen it, you’ll understand why.  Essentially, corn is prevalent in all processed foods, and an excess of it throws off your body chemistry systemically.  By substituting butternut squash, our “nachos” become rich in fiber, beta carotene, and flavor for guilt-free snacking.

Butternut has a number of health benefits, by the way.  It prevents high blood pressure by counteracting the effects of sodium in your diet because it is high in potassium.  It promotes regularity with fiber and supports healthy gut flora.  It benefits your eyes with high vitamin A, lutein, and zeaxanthin, which are all powerful antioxidants.  It helps maintain your bones due to highly assimilable calcium, manganese, iron, zinc, and vitamin C.  It supports healthy collagen levels in your skin and body.  It boosts your immune system, reduces inflammation, and is non-fattening.  Since butternut is known for its ability to increase satiety, it is a perfect food if you’re looking to lose weight.

A healthy, corn-free nacho alternative that is high in beta carotene and easy to prepare

Ingredients
  • ½ Organic Butternut Squash, seedless end only
  • ½ lb of Organic Grassfed Beef, cooked in crumbles
  • Small amount of Organic Onion, diced and cooked
  • Organic Brown Rice, cooked
  • Organic Salsa or Tomato Sauce
  • Organic Green Onions (optional)
  • ½ teaspoon Organic Paprika
  • ¼ heaping teaspoon Organic Cumin
  • organic cilantro, salt, pepper, to taste
  • Grassfed Organic Sharp Cheddar Cheese, grated on top (optional)
Instructions
  1. Peel butternut squash on the seedless end (the wide end)
  2. Slice into ⅛" rounds
  3. Roast butternut squash in 425 degree oven on parchment paper until lightly browned and soft
  4. Brown the beef with onion while the butternut is roasting
  5. Add spices and sauce
  6. Simmer 5 minutes
  7. Assemble with squash round on the bottom, beef layered above, with cilantro or other toppings
